Feeling Hot?

Let me help you keep your cool in the kitchen! I will readily admit that summer is my favourite season. I appreciate the virtues of each season and would miss falling leaves, crisp winter mornings and new spring growth, but when it all comes down to it, summer takes the first place prize in my little world.

Having said that, there are a few drawbacks to actually cooking in the summer.

The kitchen is stifiling!

Turning on an oven while the a/c is trying to cool the house seems just plain silly. Last week I actually heard myself saying, ‘Close the door, we aren’t trying to cool the outside!’ That statement comes from a long list of things my parents said that I thought I would never say.

During the warm weather, we make great use of our barbeque. From burgers to grilled veggies and everything in between, a large portion of our cooking happens outside. Try something a little different and add turkey burgers to the menu. You can also give grilling fruit a spin. There is something magical about eating a peach or a pineapple slice that has been grilled. When making chicken on the barbeque, we often grill a little extra to use in lunchtime salads. This helps ensure that your salad is balanced with protein and you won’t be on a snacking mission right after lunch.

Another sometimes forgotten appliance in the summer is the slow cooker. My friends, this is just bonkers! Pull that beautiful kitchen marvel out of the cupboard and use it for summertime cooking. Did you know that the average slow cooker costs under a dollar to run for the whole day? It won’t increase the temperature in the kitchen and it will make you feel like you have the night off in the kitchen. While I will acknowledge that we tend to want to eat lighter in warm weather, there is something so satisfying about a warm curry even in the middle of the summer. If you are feeling adventurous, try this recipe for Slow Cooker Potato Soup. Where is the adventure you ask? Eat it cold! Yes, you heard me. Eat it cold. If Gazpacho can do it, so can this recipe. Cold soup is not my idea. Go ahead and search it on the internet. You’ll find all kinds of interesting ideas.

For those of you who have joined the tribe of pressure cooker lovers, try this recipe for delicious lentil tacos. Pile those babies up with diced tomatoes, avocado and sprouts and you have a winning combination!

I have better things to do…

I want to be outside enjoying the weather, not stuck inside prepping food all day long. For those of you with children, they seem to be hungry all day long. Whether it is a growth spurt, boredom or a bit of both, the kitchen can start to feel like it is always open.

Solve the constant, ‘What can I have to eat?’ conversation by taking the time to cut raw veggies & fruit into ready to eat snacks. Cutting the watermelon up instead of leaving it on the counter where we hope someone else will cut it up is not good enough. This falls into the same category as putting things on the stairs hoping that the owners of said items will independently sort and put it all away. I know I am not alone in this wishful thinking.

Make a plan. I promise you, taking the time to menu plan saves me so much time, frustration and money. I shop more efficiently, waste far less and don’t have to spend all afternoon trying to figure out what we should eat.

Don’t Cook – I Dare You!

Yep, you heard me right. Don’t cook. Hot summer days are the perfect time to skip cooking and turn to simpler meals. Before I knew anything about, ‘charcuterie,’ there were, ‘nibbly lunches.’ This is what my boys and I would call our favourite lunches which included fresh veggies, fruit, olives, cheese, meat and whatever else inspired us. No-fuss and everyone was happy.

Add to that list of no-cooking meals, Life of the Party Hummus Dip, Mango Salsa turned into a salad with leftover grilled chicken and Greek Quinoa Salad.

Mango Rhubarb Muffins

Last week I began imagining what rhubarb & mango would taste like together. When I grocery shopped, I chose a few beautiful mangoes but had to wait on their ripening. While I waited, I explored the world of online recipes and saw all kinds of interesting things – rhubarb chutneys, muffins & crisps. Along the way, my taste buds kept bringing me back to muffins. Without further delay, I would like to introduce you to my latest recipe!

Rhubarb meets mango meets oatmeal meets coconut. This dairy-free, egg-free and gluten-free experiment turned out fantastic!

Mango Rhubarb Muffins

What happens when you take the tropical sweet flavour of mango and pair it with the pucker perfect flavours of rhubarb? Something magical and delicious!

Ingredients

  • 1 cup rolled oats
  • 1 1/3 c gluten-free or spelt flour
  • 3/4 c raw sugar
  • 1 1/2 tsp baking powder
  • 1/2 tsp cinnamon
  • 2 tbsp flax ground
  • 1/3 c unsweetened coconut
  • 3/4 c unsweetened oat milk
  • 1/2 tsp vanilla
  • 1/2 c coconut oil melted
  • 2 c rhubarb finely chopped
  • 1 medium mango peeled & diced

Instructions

  • Preheat oven to 375°F. Line your muffin tin with paper liners if you need to. (Note: I have a stoneware muffin pan that requires no greasing or paper liners. I've been using the same Pampered Chef pan for at least 10 years and I love it!)
  • In a large bowl, combine oats, flour, sugar, baking powder, cinnamon & coconut. Mix ingredients until they are evenly distributed.
    Prepare rhubarb & mango and add to oat mixture. Stir in fruit so that it is also evenly distributed.
    Melt coconut oil and set aside. Add oat milk and vanilla to the dry ingredients and stir. Now add the melted coconut oil and stir. Divide the batter into 12 muffin cups. Bake for 35 minutes, or until a cake tester comes out clean. Enjoy!

Notes

When I decided to make these muffins, I had only large flake oats on hand. I decided to pop them into my little coffee grinder to make them smaller. This is an extra step and perhaps doesn't need to be done, but the end result was great. If you have quick oats, there is no need to grind the oats at all. 
I also made these muffins with gluten-flour, but you can easily swap out your favourite flour. Click here for my tried, tested & true gluten-free flour recipe. One of my top pick is spelt flour for a little added protein and goodness.

How to Make Working From Home, Work

For many, working from home has come into full effect this past month. Here is the big question though. How do you make working from home, work?

First of all, we let’s all take a deep breath. Working from home is a whole new ball game from working in the office on a regular day. Working from home during a pandemic is also an added challenge to say the least. Take a moment and acknowledge that you don’t need to do all the things, all the time and with perfection. Give yourself a pat on the back for getting up, brushing your teeth and even taking the time to read this.

If you are a parent with kids at home, you have some new co-workers that also require you to adjust your expectations. Family first is my motto. Sometimes it isn’t easy when timelines are pressing, but when all is said and done and I look back on my kid’s upbringing, I won’t be thinking how glad I am that I got that assignment in early at the expense of not giving my kids what they needed.

That being said, work does still need to get done. The kids have school work and we have our job commitments. How can we manage all of it and come out on the other side happier & healthier?

Please join me as I share with you some of the things that I am finding helpful. I fully acknowledge that everyone’s circumstance is different. I feel very fortunate to be able to work from home and also have a husband who can do the same. The ability to trade-off responsibility is a huge benefit in the working from home game. There are plenty of you who don’t have that luxury and please know I am only trying to offer support while understanding that the view from my lens may not look like yours.

Get Up Early

I am finding that I get my best work accomplished in the morning. It is even better when it is before the kids get up. My kids have been sleeping in until around 8ish. I like to get up just after 6 and enjoy the peace and quiet of a still house. Disclaimer: I did not get up early today because quite frankly I needed more sleep. Most days I do, but today I needed that extra shut-eye, which leads me to my next point…

Be Flexible

I am a woman of routine. I value knowing what is coming next and planning my day. I’ve found that my children also function best with routine in place…even though they would deny it if asked. We’ve structured our day to have two separate work periods of time. Knowing that we work hard and focused followed by a break is motivating. That being said, flexibility is paramount. Be willing to negotiate with yourself and your family in terms of daily routines is key to making this whole thing work.

Set Boundaries

I’ve been working from home part-time for thirteen years. During that time, I also completed my nutrition schooling through distance education. I quickly learned that I didn’t accomplish quite as much work-wise if I also tried to do a load of laundry, unload the dishwasher, check FaceBook or Instagram or organize the front hall closet. Once I began practicing nutrition, I needed to consider when I wanted to be available to answer emails and phone calls. I decided to keep this to set hours. Just because I have access to my email 24/7 doesn’t mean that I should be responding to it. Let work time be work time and home time be home time.

Make a List

I work best when I focus for a period of time and just get the work done. I have always been a great procrastinator. I seem to work well under pressure which is kind of a negative reward cycle. I don’t like procrastinating, I just seem to be really good at it. This has taken some effort on my part to actively workaround. My daily calendar is helpful for this. When I jot my to-do list down, I get so much more accomplished. Make sure you keep your daily expectations in check by looking at your list and asking yourself if you would ask your best friend to do it for you. If the answer is no, edit until you could ask someone else to do it for you without any guilt.

You’ve Got This!

Some days are going to be rough. If we can acknowledge this and be kind to ourselves when those days come along, we will also be in a better space to celebrate the good days. We are in this together. I heard someone else use this analogy and I thought it was beautiful. We are all in the same storm, but we are not all in the same boat. Some of us may feel like we are in a luxury yacht at times and then in a sinking boat bailing water, maybe even in the same day. My point here is to be compassionate with your self first and foremost and let that compassion spill out to your children, your partner, your neighbours, your co-workers and the people you meet in the grocery store.

Set Yourself Up For Success!

Nutritionally speaking, the biggest struggle I hear from people is knowing what to make for meals. They desperately want to eat more veggies, fruit, lean protein and healthy fats but somewhere between this resolve and meal times, it all goes sideways.

My number one all time top tip is to make yourself a menu plan. In our home, I use this calendar to keep us on track. This website has all kinds of great printables that will help you get organized in a visually appealing way. https://www.sarahtitus.com/printables/

If I can get meal times sorted, then everything else seems to fall into place a little easier. I’m not left struggling to figure out what to make on my way home from the office. When I go to the grocery store, my cart is filled with the things that I already have a plan for. This means less food waste and more money kept in my pocket. I only plan for 5 main meals a week. This leaves room for spontaneity and leftover usage.

My current favourite recipe book is Yum & Yummer by Greta Podleski. It is honestly a fool proof book. There are even short videos to go along with each recipe and most ingredients are readily available.

I was also recently introduced to a website called Recipe Tin Eats – I’ve only dabbled, but so far I like what I see.There is lots of variety and the website is visually appealing. https://www.recipetineats.com/roast-chicken/

My wish for you is to be able to simplify life to help you achieve your goals. Often we are our own biggest distractions from getting to where we want to be. I promise, if you commit to making a monthly supper time meal plan, you will eat healthier with more variety and deliciousness than you can imagine.

Do this now…even if it just means finishing out the rest of the week with supper time ideas. We all know what happens when we put things off until later! And, don’t forget – the secret ingredient to cooking is always love!

12 Days of Healthy Christmas

The 12 days of Christmas is the period that in Christian theology marks the span between the birth of Christ and the coming of the Magi, the three wise men. It begins on December 25 (Christmas) and runs through January 6 (the Epiphany, sometimes also called

And so, I bring to you the 12 Days of Healthy Christmas:

 

  1. Slow your pace. Decide on what really matters and focus on that. Politely say no to the invitations that add stress to your life. 
  2. When going to a party eat something healthy and drink a big glass of water before leaving home. That way, you won’t be ravenous when you get there and end up eating five too many cream puffs! 
  3. If you are going to a party, keep the alcohol consumption in check and drink plenty of water. Alcohol dehydrates and increases your need for hydration. For every ‘festive’ bevvie, drink a glass of water. Remember to enjoy responsibly and have a designated driver lined up ahead of time.
  4. While at a party, scan the food table for items that look the closest to real food – think veggie and fruit platters. Make the majority of your plate those things, leaving room for only a few hor d’oeuvres.  Little innocent looking hor d’oeuvres can pack quite the calorie and trans fat punch!
  5. Be the one who brings the super awesome looking healthy food to the party. Try fruit kabobs or veggies in a small cup or my super tasty hummus dip. 
  6. Don’t forget to take the time to exercise during this busy season. Even a 20 minute brisk walk on your lunch break will do for the time being. Your body wants you to keep moving.
  7.  Skimping on sleep will help no one. Making sleep a priority will help you and the people who spend time with you. The reality is that we are just far more pleasant to be around when we are well rested. We are less likely to forget things, speak more kindly to others and make healthier choices around food and exercise. You can thank me later.
  8. Make memories with your family. Many of our holiday traditions revolve around food. Try something new like an outdoor activity that involves the whole family – perhaps a snowman making contest, tobogganing on Christmas Eve or an extended family wide game of hide and seek after the big feast.
  9. Share with others. Purchase items for the food bank as a family. Look for healthier options to share such as whole grain pasta and tomato sauce, natural peanut butter and whole grain crackers.
  10. Eat lots of fruit and veggies – aim for at least 8 to 10 servings daily!
  11. Don’t sweat the small stuff! We often add far too much to our to do list. Kick back with the family and watch or read that Christmas classic.
  12. Enjoy all things in moderation. Food and guilt don’t belong together. Do you want that super mocha frappa-lappa with whipped cream? What about the mashed potatoes with cream cheese and bread crumbs? Go for it and enjoy every last morsel! While I am not suggesting that you completely throw caution to the wind for the entire holiday season, you are wise enough to know when enough is enough and move on to the veggie platter. Completely avoiding your favourite foods often leads to obsessing about it anyways. Be aware of serving size & enjoy.

Wishing you a wonderful season of connecting & reflecting. For our family, Christmas is a time of gift giving and good food, but more importantly it is remembering the gift that a sweet babe brought to the earth so many years ago. It is in that spirit of love that I wish you the joy of the season.

Lentil Tacos

While I am the first to say that I enjoy a great taco from time to time, I will fully admit that I found myself in a taco rut of sorts. The kids began requesting them on a weekly basis. At first, I was all in. It was the perfect way to pile on the veggies and they happily did so. After a year or so of this business, I found myself finished with tacos for a good long spell. Since then, I’ve tried to incorporate a little more variety into this family favourite. Enter lentil tacos…they are quick, tasty and family-friendly!

Instant Pot Lentil Tacos

Marvellous Mocktails

There is nothing quite like a warm evening out in the yard with good friends and a cool drink in hand. What often happens though is that our drinks are filled with refined sugars, artificial flavours & colours. Take your bevvies up a notch with these simple and tasty recipes.

Step 1: Choose Your Base

Kombucha – fermented tea with probiotic activity, supports digestion, even though it tastes sweet, it contains far less sugar than pop

Sparkling Water – carbonated water, no sodium or sugar

Ginger Beer – alternative to ginger ale, often more natural ingredients and less sugar; since it has a stronger flavour, you use less

100% Fruit Juice – avoid fruit ‘beverages & cocktails,’ that often contain additional sugars

Tea – herbal, green, black – look for natural options without added artificial flavours

Step 2: Consider Your Sweetener

Not all mocktail recipes require any additional sweetener. Much will depend on your taste buds and also how much natural sweetener is already present from fruit & fruit juice ingredients.

Stevia – Can be up to 400x sweeter than refined sugar; doesn’t adversely affect blood glucose levels and may be used by diabetics. Stevia has a unique flavour. Along with its sweetness there is also a bitter component. The poorer the quality of the leaf the more bitterness is evident in the taste.

Simple Syrup – 1 cup raw organic sugar to 1 cup water – gently heat mixture to dissolve. Store in a glass mason jar in the fridge.

Tips

  • Make ice cubes out of fruit juice to avoid diluting your drink.
  • Make ahead and serve in a large glass jar. Use a ladle to serve fruit.
  • Frozen fruit is a quick & easy way to make a mocktail in a hurry.
  • Left over mocktail? Turn it into a healthier frozen treat option.

Recipes are by the cup unless otherwise noted. Mocktails will become more flavourful with infusing time. Make your drink ahead of time and let sit for a few hours in the fridge. Add any sparking water or ginger beer just before serving.

Cucumber, Lime & Mint Mojito

  • 1″ cucumber, thinly sliced
  • 1/2 lime, thinly sliced
  • 1/2 lime, juiced
  • 1 mint sprig or 5 leaves
  • 1 c sparkling water

Ginger Beer Mojito

  • 1/2 c ginger beer
  • 1/2 c sparkling water
  • 3 – 4 lime slices
  • 1 mint sprig or 5 leaves

Kombucha Mocktail

  • 1 c kombucha, unflavoured
  • 1/4 c frozen fruit of your choice – blueberries, strawberry slices

Blueberry Infusion Herbal Iced Tea

  • 1 c blueberry herbal tea, steeped & cooled
  • 1/4 c frozen berries
  • 1/4 c sparkling water
  • 1 – 2 tsp simple sugar syrup (see above for recipe)

Watermelon-Lime Mocktail

  • serves 4 – 6
  • 8 c seedless watermelon, blended
  • 1 lime, freshly squeezed
  • 1 lime, sliced for garnish
  • mint sprigs
  • 1 c sparkling water

Sangria

  • serves 10 – 12
  • 1 litre white grape juice
  • 1 c orange juice
  • 2 – 3 c sparkling water
  • 1 bag frozen mixed berries
  • 2 limes – 1 squeezed, 1 sliced
  • 1 orange, sliced

Did you know that one pina colada can cost you up to 10 teaspoons of sugar and 600 calories?

Take your bevvies up a notch with these simple and tasty recipes. You won’t find any artificial flavours or copious amounts of refined sugar here!

Step 1: Choose Your Base

The Gift of Time

Christmas is one week away and  I must ask, how are you doing? Fine, yeah I thought so. That is what we tell others as if saying it enough will help us believe it. If I am being honest, I am wavering between feeling like I’ve got this in the bag and then waves of overwhelm mixed with lack of motivation come flooding in.

Does this actually sound more like you during the holiday season? We feel the pressure to find just the right gift, to keep up with food prep and party planning. Add on top of that, trying to do normal life…you know eating well, sleeping and finding time to exercise.

Last week I was reminded of something. It is something that I already know, and I’m guessing you do too. Regardless, I needed to be reminded and I want to share it with you.

The gift of time is so much more precious than any material gift I could give. We remember experiences together far more than we remember gifts that were given. Okay, in all fairness, the year that I received my Cabbage Patch doll was pretty great! But, I think that you get the idea. With a week away from Christmas, I want to focus on time spent together. Because when all is said and done, it really is the only currency that matters!

Take a deep breath my friend. Carve a quiet moment for yourself. You need this and you will be a much happier and productive person if you start by giving yourself this gift. Sip a hot cup of cozy and gaze out the window, flip through a magazine, read a book or spend a little time journaling or in prayer. Whatever you do, don’t pick up that phone or tablet. When that hot cup has warmed you from the inside out, spend 5 minutes prioritizing your day. You will feel calmer, more joyful and approach the day with a clear head. To find this time, you will likely have to get up a little earlier – eeek! I know, it is a sacrifice, but I’m telling you it is so worth it. I get up every morning at 6:15 and it is absolutely worth the 45 minute early wake up call.

By first giving yourself the gift of time, you will be better able to give others the gift of your time. Challenge yourself to be fully present with family & friends over the holidays. All the time would be great, but let’s start with baby steps!

First of all, let yourself off the hook of self imposed perfection. When you do this, all of a sudden there is freedom…so much freedom! And then, try some of the ideas below or add your own.

Gift of Time Ideas

Spend the whole day in your jammies with your family. You can stay home all day, or if you are brave enough go somewhere together like the library, the local cafe or the movies.

Bake cookies together. While my vote is for homemade goodness, I am not opposed to the tube of cookie dough you can buy in the store. This is about time together, right?

Go for a walk in the dark. There is something especially calming about a walk in the moonlight. Fortunately with a sun that sets by 5, there is plenty of time in the evening to do this.

Have a family sleep over by the tree. Yes, even if it is just grownups in the house.

Build a snowman, go tobogganing, make snow angels. I know,at the moment in our little part of the world there is very little snow to be found. It will come…it always does.

Drink hot chocolate on your porch. Bring out a large carafe or your slow cooker with extra. Invite your neighbours who are walking by to stop for a cup.
