Beating the Breakfast Blues

Deciding what to eat for breakfast in the morning can seem like solving a complex mathematical equation at times. We are often still half asleep as we make our way into the kitchen looking for some nourishment. We get stuck in a rut and usually end up eating something that leaves us feeling uninspired.

I recommend that when thinking about the week ahead of you, come up with 3 different breakfast options that you can rotate your way through. This alleviates trying to re-invent the wheel everyday and makes your morning routine a whole lot easier. One of my favourite breakfasts is a breakfast sandwich. It checks off all my boxes for deliciousness, balance as well as ease.

1 slice whole grain or sprouted grain bread, lightly toasted
1-2 tbsp hummus
1 slice of tomato
1 free range egg, hard boiled & sliced or over-easy
1/2 sliced avocado
drizzle of balsamic vinegar
crumbled feta, optional

Place toast on plate. Spread hummus in place of butter. Place tomato slice on bottom, followed by egg and then avocado. Drizzle the balsamic vinegar and sprinkle with feta. Use a fork & knife to eat, unless you are incredibly skilled and not making a mess. Enjoy.

Better Breakfasts

I am a firm believer that no matter what time you choose to break your fast at, whatever it is that you are eating should be nutrient dense and delicious. I also understand that breakfast can be one of the trickiest meals to maneuver. We are usually just waking up and want to find something quick and easy to fill our bellies. As a result, we often look to prepackaged foods to start our day.

One of my favourite breakfasts, is granola, yogurt and berries. Even though this breakfast sounds pretty healthy, there are a few things to consider before hopping on board.

First of all, is your yogurt sweetened & flavoured? If you answer is yes, you will find yourself well on your way to overconsumption of added sugar for the day. The WHO recommends that children consume no more than 3 to 4 teaspoons of added sugar daily. For adults, the recommendation is no more than 6 to 9 teaspoons. The average daily consumption of added sugar for children and adults alike is 33 teaspoons! Shocking yes, but so easily done when you consider how many foods that we purchase have added & excessive amounts of sugar. In one cup of your average flavoured & sweetened yogurt, you are looking at about 4 teaspoons of added sugars. My vote? Look for a plain unsweetened yogurt. You get added points for extra protein by choosing Greek or skyr options. It may take you some time for your taste buds to adjust, but it is well worth the effort. Remember, we are eating this yogurt with our homemade granola and fruit and these additions will bring their own sweetness to our bowl.

Secondly, many store bought granolas are also high in refined sugars and they simply just don’t capitalize on the opportunity to add all kinds of extra goodness to their packages by skimping out on healthy fats and fibre from a variety of seeds & nuts.

Come along with me for a little granola experiment of your own. Gathering these simple ingredients and investing a bit of your time will leave you with a bowl of goodness, a full belly and a wonderful sense of accomplishment.

Amy’s Best Ever GranolaBetter Breakfasts granola

3 cups rolled oats, not instant or quick
1 cup pumpkin seeds
1 cup coarsely chopped almonds, walnuts or pecans
6 tbsp. sunflower seeds
6 tbsp sesame seeds
3 tbsp flax seeds
½ cup unsweetened coconut
½ tsp cinnamon
dash of nutmeg
3 tbsp coconut oil, melted
6 tbsp real maple syrup or local, raw honey

Preheat oven to 250°F. Mix ingredients and spread out on 2 baking sheets. This allows for adequate heat distribution. Bake for about 40 minutes stirring 4 times. After 40 minutes, turn off the oven and just leave the trays of granola in the oven to continue to achieve that great crunch factor from the residual heat. Store in glass jars once cooled. Enjoy as a yogurt topping, with milk of your choice (cow, almond, rice) or nibble on as a snack. Store in a glass jar. Note: Sometimes I like to play with the spices adding ground cardamom to the mix too.

Pancakes for Everyone I Say!

The Elmira Maple Syrup Festival is just around the corner. And while it won’t be as in years past with bustling crowds, we will be doing our part to support the virtual version of this year’s festivities. While we will be purchasing the pancakes in a box option, and eagerly await to see what else will be offered, I thought I would share with you my recipe for gluten free & dairy free pancakes. As a mama to a boy with a gluten & dairy sensitivity, we’ve perfected our own recipe for fluffy goodness that skips the gluten & dairy but doesn’t skip out on taste or texture.

Pancakes – Gluten Free & Dairy FreePancakes

1 egg, whisked (or 1 tbsp ground flax seed whisked with 3 tbsp warm water)
1 1/4 c milk (or unsweetened oat or almond beverage)
1 tbsp raw sugar
1/2 tsp vanilla
3 tbsp melted coconut oil
1 1/2 c gluten free flour
1/4 c ground flax seed
3 tsp baking powder

In a large bowl, combine egg or alternative, milk or alternative, sugar & vanilla. In a smaller bowl, whisk together flour, baking powder and ground flax. (For gluten free flour, there are many store bought versions you can purchase that are ready to use. If you would like to try making your own, pop on over to my website here for the recipe I use.) Add dry ingredients to wet & mix. Add melted coconut oil to batter & mix. Drop by ladle into hot pan. When pancakes have puffed up and filled with bubbles, flip over and cook through. Try adding blueberries or apples & cinnamon to the batter. Enjoy with Elmira’s own real maple syrup.

The Ins and Outs of Pressure Cooking

Pressure Cooking

One of the hot topics I find myself often chatting about with others is electric pressure cookers. I find myself discussing whether or not they should take the leap and purchase a pressure cooker, or sometimes they have already have one and now they aren’t sure what to do with it.

Let me tell you, I was slow to join the electric pressure cooker game. I thought why in the world would I need another appliance to try and find room for? Then it happened, my slow cooker broke and I needed to replace it. It was at that point that I considered the many functions pressure cookers. The particular brand that I chose has a sauté function, is able to cook rice, creates yogurt, makes quick work out of cooking dried beans as well as making a great slow cooker. I use my pressure cooker so much that I actually purchased a second! Just yesterday I used both of them – one made me breakfast and the other one made me lunch!

Considering a Pressure Cooker?

While electric pressure cookers are fast, you have to keep in mind that you will need to add on additional time to your meal prep time for the unit to reach the correct pressure to begin the cooking time. This typically takes 10-20 minutes depending on what you are cooking.

Watch for sales. Pressure cookers often go on sale right around the holidays, Mother’s Day and in September for back to school.
So what did I have for breakfast? Creamy steel cut oats…and I had enough to have it again for breakfast later on in the week! See below for the recipe!

Pressure Cooker Steel Cut Oats

Equipment

  • Pressure Cooker

Ingredients

  • 1 tbsp coconut oil
  • 1 c steel cut oats
  • 1/2 tsp cinnamon
  • 1 tbsp maple syrup
  • 1 tsp real vanilla
  • 3 c water
  • your choice of toppings

Instructions

  • Using the saute function, toast 1 c of steel-cut oats in 1 tbsp coconut oil. The oats will start to smell a little nutty and add to the overall flavour of the final bowl.
    Turn off saute function and add cinnamon, maple syrup, real vanilla and water. Set the pressure cooker to 2 minutes. Once the 2 minutes are up, leave it in the pressure cooker for an additional 20 minutes. This will help continue to soften the oats.
    Scoop yourself a bowl, adda little milk and whatever toppings inspire you. I added shredded coconut,walnuts and a sliced banana. Delish!

Mango Rhubarb Muffins

Last week I began imagining what rhubarb & mango would taste like together. When I grocery shopped, I chose a few beautiful mangoes but had to wait on their ripening. While I waited, I explored the world of online recipes and saw all kinds of interesting things – rhubarb chutneys, muffins & crisps. Along the way, my taste buds kept bringing me back to muffins. Without further delay, I would like to introduce you to my latest recipe!

Rhubarb meets mango meets oatmeal meets coconut. This dairy-free, egg-free and gluten-free experiment turned out fantastic!

Mango Rhubarb Muffins

What happens when you take the tropical sweet flavour of mango and pair it with the pucker perfect flavours of rhubarb? Something magical and delicious!

Ingredients

  • 1 cup rolled oats
  • 1 1/3 c gluten-free or spelt flour
  • 3/4 c raw sugar
  • 1 1/2 tsp baking powder
  • 1/2 tsp cinnamon
  • 2 tbsp flax ground
  • 1/3 c unsweetened coconut
  • 3/4 c unsweetened oat milk
  • 1/2 tsp vanilla
  • 1/2 c coconut oil melted
  • 2 c rhubarb finely chopped
  • 1 medium mango peeled & diced

Instructions

  • Preheat oven to 375°F. Line your muffin tin with paper liners if you need to. (Note: I have a stoneware muffin pan that requires no greasing or paper liners. I've been using the same Pampered Chef pan for at least 10 years and I love it!)
  • In a large bowl, combine oats, flour, sugar, baking powder, cinnamon & coconut. Mix ingredients until they are evenly distributed.
    Prepare rhubarb & mango and add to oat mixture. Stir in fruit so that it is also evenly distributed.
    Melt coconut oil and set aside. Add oat milk and vanilla to the dry ingredients and stir. Now add the melted coconut oil and stir. Divide the batter into 12 muffin cups. Bake for 35 minutes, or until a cake tester comes out clean. Enjoy!

Notes

When I decided to make these muffins, I had only large flake oats on hand. I decided to pop them into my little coffee grinder to make them smaller. This is an extra step and perhaps doesn't need to be done, but the end result was great. If you have quick oats, there is no need to grind the oats at all. 
I also made these muffins with gluten-flour, but you can easily swap out your favourite flour. Click here for my tried, tested & true gluten-free flour recipe. One of my top pick is spelt flour for a little added protein and goodness.

Taste of Woolwich Smoothie

Thanks to all those who attended Taste of Woolwich! What a great time we had with baby animals, learning about bees, crafting with the kiddos, meeting the Cooking Ladies and plenty of fresh local produce to bring home to our kitchens.

I am a firm believer in eating real food and the fresher the better!  I am so grateful that a couple of local farmers had the vision for the town of Elmira to have a market to call its own. It was so much fun to blend the Taste of Woolwich, the launch of the Foodlink Buy Local, Buy Fresh Map, cooking demonstrations and the market all in one action packed event!

Notes

I never imagined putting apple cider and yogurt in a smoothie together. One of my fellow Taste of Woolwich Committee members introduced me to the idea and I'm so glad I gave it a whirl...literally! It really is delicious! Just make sure you don't use apple juice. The level of acid in the cider doesn't curdle the milk, but apple juice will. Enjoy!

Think Outside The Box

Growing up, a healthy breakfast to me was a bowl of cereal with low fat milk, a piece of toast and a glass of orange juice.

Times have changed in my little world! The problem with most store bought breakfast options is that they are made with highly refined grains, a boat load of sugar and a handful of synthetic vitamins & minerals that has lead us to believe that we are eating a nutritionally sound meal.

I challenge you to see outside the box when it comes to breakfast options. Who said you couldn’t have chili or stew for breakfast? In some cultures, they start their day with a fresh salad or a warm soup. Their breakfasts are savoury and not sweet like many North American kitchens are serving first thing in the morning.

So what do we eat at our house? I like to make sure that our meals and snacks are balanced. You want to be eating healthy protein, a complex carb and healthy fat each time. This will give you the fuel you need to stay focused & full until you eat again. Eating breakfast is essentially breaking a fast. We really do want to start our day off on the right foot and eating a healthy breakfast is an important part of this routine. Skipping breakfast is a sure way to a sluggish metabolism, unfocused concentration and late night snacking.

Here is what you might be served if you stopped by my house for breakfast. Be sure to call ahead though so I can make sure there is enough on the table!

  • Plain oatmeal with a little maple syrup, raw walnuts, almonds or pecans and a tablespoon of chia seeds or hemp hearts.
  • Free range eggs served up in various ways. Omelettes are my favourite as they offer a perfect opportunity to add some extra goodness like sautéed onions, peppers and spinach to my breakfast. Or, add a little nitrate free turkey sausage and sliced tomatoes to your hard boiled or fried eggs.
  • Sprouted or whole grain toast with nut butter & a little naturally sweetened blueberry jam.
  • Whole grain muffins that are packed with real fruit, flax seed & whole grains with a side of fruit & Greek yogurt.
  • Smoothies – a perfect opportunity to get 3-4 servings of fruit & veggies in your body at the start of the day.

Tried, Tested & True Pancakes

We live just outside a small town that puts on a huge maple syrup festival every year. My children have been asking for over a month now when the Maple Syrup Festival will be. We have put in on the calendar and already have been discussing what foods we should eat while taking part in the festivities. Tomorrow is the big day! So far pancakes and a dill pickle on a stick have been confirmed!

Real maple syrup has become a staple in my home. I use it on my homemade pancakes of course, but it is also fantastic as a sweetener in my yogurt, on my oatmeal and in my homemade granola. Did you know you can swap out refined sugar in your baking by using the same amount of syrup that the recipe calls for? Just be sure to reduce the amount of liquid in the recipe by about a half cup.

Maple syrup is rich in antioxidants and is a great source of zinc and manganese. As a nutritionist, I pay attention to where my food comes from and how it got to me. By all accounts, maple syrup is a real food that is locally sourced.

In honour of this weekend’s festivities, I thought I would share my pancake recipe. I like to top my pancakes with a little plain yogurt, a few berries and drizzle a little syrup on top. While maple syrup is a real food, it is still a sugar and should be used in moderation. My children would like to drown their pancakes in syrup…we are still working on that!

Tried, Tested & True Pancakes

  • 1 egg whisked
  • 1 1/4 cup milk cow, almond, coconut or rice
  • 1 tbsp sugar raw

  • 3 tbsp butter melted
  • 1 cup light spelt flour
  • 1/2 cup barley flour
  • 1/4 cup ground flax seed
  • 3 tsp baking powder
  • 1/2 cup real maple syrup

Instructions

  • In a large bowl, combine egg, milk, sugar & vanilla. In a smaller bowl, mix flours, baking powder and ground flax. Add dry ingredients to wet & mix. Add butter to batter & mix. Drop by ladle into hot pan. When pancakes have puffed up and filled with bubbles, flip over and cook through. Enjoy with real maple syrup. I really like adding blueberries or apples & cinnamon to the batter.

Notes

You can easily make this recipe gluten free by using this recipe for Susan's Gluten Free Flour Mix. They taste great, although they do get a little thick. Try adding an additional 1/2 cup of 'milk' to thin out the batter.
This recipe also makes fantastic waffles! No need to change anything except your method of cooking!

Easy Peasy Spelt Bread

I recently invited some of my boys friends over and we did a little cooking together. I decided that I wanted them to try baking bread. It got a little messy with 6 kids in the kitchen with a bag of flour, but guess what? We all survived, the kitchen got cleaned up and we all ate some delicious bread. The kids were proud of their accomplishment – and I was too! Here is the copy of the recipe we used. It is a quick bread to put together and requires no time to let rise. It was a perfect beginner recipe.

 

Easy Peasy Spelt Bread

With only 5 ingredients in this recipe, there is little room for error. This is a great beginner bread recipe! This recipe originally came from an issue of 'Today's Parent.' It has become a well-loved recipe in our home. Spelt flour is considered an ancient grain and is a great source of protein, fibre, iron and zinc. For some people who have difficulty digesting wheat, spelt may be a good option to try. Spelt does contain gluten though and is not recommended for those people who must avoid gluten containing foods.

Ingredients

  • 4 1/2 cup light spelt flour
  • 2 tsp baking soda
  • 1 1/2 tsp salt
  • 1 3/4 cup plain yogurt full fat
  • 1/4 cup local honey

Instructions

  • Preheat oven to 400 F. In a large bowl, whisk together 4 ¼ c of the flour with baking soda and salt. In a small bowl, mix yogurt and honey, and then combine with dry ingredients. Stir until the dough comes together; it will be very soft and floppy. Spread the remaining ¼ c flour on your work surface and, with floured hands, roll the dough into a rough ball. Place it on a baking sheet lined with parchment paper and gently flatten with your palm to create a disc measuring about 6 inches in diameter. With a sharp knife, slash an X across the surface and sprinkle with any remaining flour. Bake 30 to 35 minutes or until golden brown on top and a tester you’ve inserted comes out clean. Let cool on a rack. Alternatively, divide the dough into 2 smaller disks and bake for 20 to 25 minutes. Enjoy!

Super Quick & Easy Skillet Granola

For those of you who know me well, you know I love me some granola! The trouble with making your own granola is that it can take a while in the oven to get it right. My oven granola takes about 40 minutes on low heat and then a little more time just sitting in the warm oven to get the right crunch factor. While it tastes great and totally worth the effort, sometimes I don’t have time to babysit granola. I’ve discovered that making this super quick and easy skillet granola has saved me time in the kitchen and allowed me to have one of my most favourite breakfasts and snacks in a hurry. Quick & Easy Skillet Granola

Granola in the olden days was a healthy and nutritious cereal and snack. Enter in modern manufacturing and all of a sudden it takes a nose dive! I've rescued granola and returned it to its former state. Enjoy!

Ingredients

  • 2 cups oats old fashioned
  • 1/2 cup raw nuts almond, cashew, walnut, pecans or a mixture of these
  • 1/4 cup raw seeds pumpkin, sunflower or sesame
  • 1/4 cup unsweetened coconut shredded
  • 1/4 cup real maple syrup
  • 1 tbsp organic butter or coconut oil
  • 1/4 tsp cinnamon
  • 1 dash sea salt

Instructions

  • Pretend you are on a television cooking show and have everything ready to go in small bowls before you begin cooking. The granola toasts quickly and you won't have much time to measure ingredients while you are cooking. (I burnt my first batch.) In a large cast iron skillet, toast the oats, nuts and seeds over medium high heat. Watch closely as you don't want it to burn. This will take about 2-3 minutes and the mixture will start to turn a little golden. Add the maple syrup, coconut oil or butter, cinnamon & salt. Cook this for another 3-4 minutes. Remove from heat and leave in pan until granola has cooled and hardened into tasty crunch bits and pieces. Store in mason jars. Enjoy with yogurt or on ice cream.
