Mother’s Day is just around the corner. As a mama myself, I know that one of the biggest ways to my heart is when my family prepares me a meal. My personal favourite is breakfast in bed. Whether you are also hoping for breakfast in bed, or are planning a brunch with extended family, this dish is sure to please. It is quick and easy with minimal prep. In fact, you do most of the work the night before and just need to pop it in the oven in the morning.

French Toast CasseroleFrench Toast Casserole

  • 1 loaf sourdough, French bread, or any other type of crusty bread, cubed (gluten free bread works well too)
  • 8 large eggs
  • 3 c milk or unsweetened dairy alternative (you may need a little more – check in the morning)
  • 2 tbsp maple syrup
  • 1 tsp vanilla
  • ¼ tsp nutmeg and cinnamon

Cube bread and place into a buttered casserole dish. Mix the rest of the ingredients and pour over bread. Cover and refrigerate overnight. In the morning, preheat oven to 350 F. Peek at the bread before baking, if it seems too dry, add another ½ – 1 c milk. You want the bread squishy, but not floating in liquid. Bake for 40 minutes. With 10 minutes left to bake, lightly drizzly with more maple syrup and sprinkle with additional cinnamon.

Top with plain Greek yogurt, fresh fruit, maple syrup and pecans and you’ve got yourself a wonderful meal.
