There are so many benefits to fitting more veggies into your life. Not only is it good for us, but it also adds a little colourful pizzaz to our plates in the middle of what can sometimes be a dark & dreary winter.

Eating more vegetables goes way beyond adding a leafy salad to your meal or enjoying a plate of raw veggies with hummus for your afternoon snack. While these are still great choices, we tend to want warmer comfort type foods in the midst of winter. Soups, stews & curries are great ways to add extra veggies into your diet.

Spinach, Tomato & Mushroom Pasta

1 tbsp avocado oil
1 clove garlic, minced
1 pkg cremini mushrooms, sliced
½ tsp sea salt
Large can of stewed tomatoes (no added salt), or 3 fresh tomatoes, chopped
2 large handfuls of baby spinach
½ c black kalamata olives
Feta cheese for serving
1 package of chickpea or lentil pasta

Begin by sautéing mushrooms in avocado oil in a large frying pan – preferably one with a lid. Meanwhile, place a large pot of salted water on the stove and add pasta once water has come to a rolling boil. Next, add sea salt and garlic to the pan. Sauté for one minute. Next add tomatoes and spinach. Place lid on pan so that spinach begins to wilt. Once spinach is cooked, add 8-10 olives and about ¼ cup of the olive brine to the dish. Serve over pasta and top with feta cheese. Enjoy!
