Tasty Tacos with the Kiddos

March Break is the perfect time to carve out a little more time in the kitchen with the kiddos. It has been my experience that encouraging my own kids to invest time in the kitchen is a lot easier when the food they are involved in is something that I know they already enjoy. This lays the foundation for building hands on skills as well as increasing their willingness to try new foods.

One of my kids most favourite meals for a few years running has been tacos. Tacos are a win-win in my mind. They get the flavours that they want & I provide lots of veggies for toppings.

It occurred to me one day that perhaps using the store-bought packages of seasoning weren’t the best options around. As I read through the ingredient list, there were several ingredients that I didn’t have in my spice cupboard. The list read more like a science experiment and less like a recipe. I also was shocked at how much sodium were in some of the packages. I decided then and there that there had to be a better way.

Allow me to introduce you to our taco seasoning recipe. We make it in big batches and store in a glass jar in our spice cupboard. That way we are ready to make tacos in a moment’s notice.

Tacos

Taco Seasoning

½ c chili powder
¼ c cumin
4 tsp paprika
4 tsp sea salt
2 tsp garlic powder
2 tsp onion powder
2 tsp dried oregano or Italian seasoning

Combine all of the spices into a small jar. Brown ground turkey, chicken or beef in frying pan. For 1 lb of meat, I use approximately 1-2 tbsp of seasoning with a half cup water. You can also use this seasoning with lentils to make a vegan alternative to taco meat.

Fresh Salsa Flavours of the Season

There simply is nothing like a bowl of fresh salsa. This simple recipe highlights the fresh flavours of the season while getting extra points for being quick & easy. When I make this salsa, the bowl nearly gets licked clean!

Fresh Salsafresh salsa

1 large tomato or about 30 cherry tomatoes
1 pepper – orange, yellow or green
1 small sweet onion
1 lime
sea salt to taste
a few dashes or cayenne pepper or a small jalapeno pepper if you are feeling adventurous
1/4 c fresh cilantro, chopped

Mix all ingredients in a small bowl. Allow flavours to blend for about 30 minutes before enjoying with tacos, nacho chips or as a tasty addition to scrambled eggs. It will keep for 1-2 days in the fridge.

Firing Up the Grill

The long weekend in May is the perfect time to fire up your grill and get cooking. Looking for a little bbq inspiration? Look no further, I’ve got you covered.

Every outdoor chef needs a great marinade for grilling. Here is a quick and easy one to get you going.

Lickety Split Marinade

1/4 c soya sauce or gluten free tamari
2 tsp garlic powder
1/4 c water
1 tsp raw or brown sugar
2 tsp white vinegar

Add the ingredients to a small glass jar. Place the lid on jar & shake. Pour over steak or chicken and marinate in the fridge for 4 to 6 hours. You can also marinate large portobello mushrooms for about 1 hour before grilling.

Grilled Veggiesgrill

One of my most favourite tools for the bbq is a heavy duty grilling basket. This gets used most often at my house for grilling a pile of veggies. For best success, make sure you coat your basket with a little avocado oil so that your veggies don’t stick. Avocado oil can handle high heat temperatures better than most olive oils. Be creative with your veggie selection. I’ve had much success with onions, mushrooms, bell peppers, zucchini, thinly sliced carrots, celery & snap peas. Watch your veggies carefully, stirring often and avoid charring them. Simply cut your veggies, drizzle a little oil, sprinkle with salt & garlic powder and let the bbq take care of the rest.

Mango Salsa

This little addition will elevate your meal to a whole new level! With very little effort and a whole bang of flavour, impress your family with this quick & easy salsa! We recently paired this salsa with a delicious jerk chicken and roasted cauliflower. My mouth is watering remembering all the amazing flavours of that meal! The sweetness of the salsa tamed the spiciness of the jerk seasoning, making it a meal that works for even sensitive taste buds.

Ingredients

  • 1 mango diced
  • 1 lime freshly squeezed
  • 1 red pepper diced
  • 1/4 c cilantro finely chopped
  • dash of sea salt

Instructions

  • Dice the mango & red pepper and finely chop the cilantro. Add the lime juice and stir. Allow to sit for at least five minutes to let all of the flavours blend. If you are a red onion fan, add 1 tbsp finely diced to the salsa as well.
